  • After an afternoon of some fun cooking I sooo enjoyed digging into this cup of butterscotch yogurt with a scoop of chocolate heartbreak. I am sooo so so indescribably thankful for the body of Christ. Sarah reminded me of why it s so important to share our burdens.   • Cold Sunday s are made for eating crumble. We ve made this delicious banana and cacao nib crumble to go with our Banoffee Almond M lk yog. For this LARGE crumble you ll need; Bunch of bananas(around 5) 2x pot of Banoffee Almond M lk Nush(if you haven t managed to hunt down our new flavour yet.Caramel and Hibiscus Almond or Natural Almond would be a good substitute) 2 handfuls of Cacao Nibs 100g Oats 50g Ground Almonds 50g Desiccated Coconut 2 tbsp of Coconut Sugar(more if you like it sweeter) 4 tbsp of Coconut Oil Pots of Banoffee Nush to serve To make the compote heat the bananas gently with the Banoffee Nush on a stove until all soft.   • I was definitely looking forward to this lunch. Since my digestive system has been teaching me again that I m not invincible and immune to stress I went with super simple. I m not forcing down the veggies but I might experiment with some tonight my digestive issues have made me think of little precious Charlie who taught me about having joy during suffering because that little guy had such joy even though he went through so many surgeries and had so many heart issues, gut issues, and yet y all every month of Charlie s life was worth it. Every moment shows how God brings beauty out of trial. Trials in and of themselves aren t good things, but what God produced in Charlie and his family was priceless. Charlie I can t wait to dance in heaven with you, but I m so thankful that you taught me about learning to suffer with joy and be hopeful in the journey.   • Sometimes dinner is just a mishmash of weekend leftovers. What s in my bowl 1. Salmon: currently my favourite source of protein for its anti inflammatory benefits( thanks to its omega-3s).   • So it s been suggested to me to get vulnerable and give you guys a few facts about myself that you probably wouldn t already know about me(and I ll try to make it a bit juicy for ya)! If you relate to any of this, please do comment and let me know! 1)I grew up on 10acres in the farmland. 5 kids, 2 parents, and an open door policy for all the neighbours! 1 delinquent boy who would frequently lock us out of our own house. 2) my 1st date was with the shortest, thinnest Chilean boy in grade 8 named Ian(funny cause I married a Mexican man named Ian! Not short, nor skinny!) we went to outdoor golf and We were great friends! He moved to Chile and returned a yr later, the tallest kid in school! 3) I was always the teenager reading about diets and food and I was always exercising, yet I never looked like the sports magazine cutouts that lined my bedroom doorframe. Never. 4) my New Years resolution at 18 was to hang upside down from some monkey bars and see the world a different way. 5) I met my husband at the garbage dump.because I was the person in the booth( scale operator) who charged the difference in weight. Hey, 12/hr over the minimum 8 was a total score at 19yrs old! 6) to this day, locked in a box in my house, I have a guiding note I wrote to myself when I was 18. A cardboard rectangle wrapped in tape made it super durable over the years! 7) Before having Diego, I had a chemical pregnancy.basically your body wants to be pregnant so badly that it starts to act like it is, when it isn t. For a short time I could barely get out of bed. 8) I am incredibly tuned in to sub-language: body language, tone of voice, mannerisms, choice of words, information offered, order of topics mentioned.it gets weird! 9) I used to never be able to say no to people. The process of learning how to value myself and my time was one tough thought process to break! Way tougher than you d think! 10) My life is not perfect and when I feel overwhelmed or frustrated, I whisper I m so grateful, thank you. Thank you. Thank you. I m so grateful.   • Need a boost Try this salad dressing I frequently make by! I believe it s called their Nutritional Yeast Dressing! Filled with B vitamins, this dressing is a great stress slayer and anti anxiety food. Serves: makes about 8-10 medium-sized balls INGREDIENTS: 1) 2 handfuls cashew nuts 2) 12 pitted dates(find these in the baking section of most big food stores) 3) 1 teaspoon organic cocoa(we used Green and Blacks organic cocoa) 3) 2 tbsp ground almonds(find this in the baking section of most big food stores e.g. Waitrose or Sainsbury s) 4) 1 teaspoon orange essence(find this in the baking section of most big food stores) 5) 1 scoop chocolate Sun Warrior vanilla protein powder(Warrior blend)* 6) 2 tbsp almond milk(we used Alpro unsweetened almond milk) METHOD: 1) Blend the dates and cashews in your food processor until finely chopped 2) Add the rest of the ingredients and blend until the mixture starts to combine 3) Grab handfuls of the mixture and compress in your hands before rolling into balls 4) Eat immediately or chill in the fridge before eating if your prefer.

How much you weigh depends on a lot more than your calorie intake- hormones, microbiome, activity levels, stress levels, genetics, toxin exposure, etc. And truthfully, the topic of weight loss makes me cringe because. BUT I see so many women who have been taught the 1200 calorie lie, and quite frankly it s ruining their health. If you re a woman with adrenal, thyroid, or hormone issues, chances are you need to be eating much more than 1200 calories to nourish your body and turn off starvation signals. ESPECIALLY if you are also active or exercise frequently. Not sure how many calories you should be eating A decent ESTIMATE is to take your weight, and multiply it by 10-12, depending on how active you are. For example, I weigh 135 and am fairly active(exercise 5 days a week), so I would multiply 135 by 12, which results in about 1600 calories. If I m really active, or just hungrier, I ll eat closer to 1800. Do I suggest you count calories every day for the rest of your life Heeeeck no. But I do think it helps to have a general idea of the amount of food you should be eating to support hormones, energy, thyroid health, and muscle mass, especially if you re used to undereating like many women out there.   • I m getting better at filling my cup. It s a process. Some days I m really good at committing to filling my cup and actually following through on it. Other days, my love for giving to others creates the space for me to over do and over give. When I over give for days in a row and neglect my own needs, I get depleted. When I get depleted, there is less of me to give to others. When this happens, I can become sad and resentful. I think that moms and women in general can relate to this on some level. It s awful to feel resentful of giving when you have a naturally giving heart. Because of this, I definitely believe in the importance of daily self care and constant self love. Today, I m happy to say that I ve done a good job of taking care of myself. I attended a soul lifting yoga class and then went grocery shopping for nourishing foods and treated myself to 3 beautifully vibrant long stem roses. A symbol of my love for myself and a self recognition of the internal divine beauty within myself. I encourage all of you to recognize and nourish your own glow. Vegan chilli: Slowly sauté 1 red onion 1 clove garlic 1 green& 1 red chilli(to taste) 1 small diced sweet potato 1 can organic kidney beans 2 tablespoons quinoa 300ml passata 200ml organic vegetable stock Paprika, cumin, coriander seed Slowly cook until all soft and delicious. About 20-30mins. Salsa: Dice: 1/2 cucumber 2 avocados 2 tomatoes 1 spring onion 1 fresh corn cob Coriander to taste Dress with lime juice, salt and pepper, dash soy sauce.   • Pisto con huevos This dish will serve 4, it may take around an hour to make and will be well worth the wait! 2 tbsp olive oil 2 onions, finely chopped 4 garlic cloves, finely chopped 2 capsicum chopped into chunks 1 heaped tsp dried oregano a few thyme sprigs, leaves picked 4 bay leaves 2 small zucchini, chopped into chunks 1 eggplant, chopped into chunks 4 large tomatoes, roughly chopped 4 large eggs ½ small pack parsley, leaves roughly chopped Heat the oil in a large flameproof casserole dish or a cast-iron skillet over a low heat. Add the onions and a sprinkle of salt, cover and cook gently for 15 mins, stirring occasionally. Add the garlic and cook for another 2 mins. Next, throw in the capsicum and cook over a medium heat, covered, for about 5 mins, stirring every so often, until they are just tender. Mix in the oregano, thyme, bay leaves, some black pepper and a little salt, if needed. Tip in the zucchini and eggplant, combine thoroughly, and cook over a medium heat, covered, for 10 mins. Stir in the tomatoes, cover and cook for 20 mins, stirring occasionally. Carefully crack the eggs over the pisto try not to break the yolks. Cook in the sauce on a medium heat for 5-6 mins until the eggs are cooked through but still a little soft, then scatter with parsley before serving!

  • Scaredy-cat Saturday is here! I was tagged and challenged by, one of my kitty friends, to post a picture of myself being a scaredy-cat. Well, as it goes, I have to nominate some of my other paw-friends as well, but I also have to list what makes me scared. I think the most scary thing in my life is not having food around me.
